Comparative study on chemically raised and biologically raised cookies

Objectives:


To develop the taste of cookies biscuits.

To enhance the flavor of cookies biscuits.

To win the consumer taste at all level.

CONCLUSION: The project work is carried out at dhaka, bangladesh in nabisco biscuits & bread factory to prepare of cookies chemically and biologically. All ingredients are arranged by nabisco biscuits & bread factory to complete the project. The project is completed by some important steps, like that mixing, forming, cutting, baking, cooling, stacking, packing, etc. At first prepare dough by creaming-up mixing method. Then start forming completing the forming biscuits will be baked by an oven .After baking biscuits should be cool with the relative humidity (56 – 60%) and temperature control area. Then packing and cartoning is done for the storage of biscuits. During the processing quality control department has been maintained as per rules of national and international standard. Quality parameters are checked by the physical, chemical and organoleptic test.
